Last week I made a Mango & Ginger Tofu Strudel (click here to see the post). I was so impressed with myself that I decided to make another one. Plus I still had tofu and phyllo dough. I went to the grocery store for some inspiration and found some bosc pears. I typically am not a huge fan of pears but I love cooking and baking with bosc pears. They’re easy to work with, keep their shape and have a nice texture when cooked. When I got home I was looking for a liquid to stew them in and stumbled upon some ice wine that I got at a golf tournament last year. Bam. Ice wine and pear strudel bitches.
I used the exact recipe from my Mango & Ginger Tofu Strudel post for every thing except the fruit filling. You can switch out the filling for anything you want like chocolate, peanut butter, berries, or even apples & caramel!
Ice Wine & Pear Filling
4 bosc pears, peeled and diced
1 tablespoon grated ginger (freeze it first for easier grating)
1 vanilla bean, split down the middle
3 oz ice wine
1/2 cup water
Cook all of the ingredients on medium for about 30 minutes. I covered mine once it came to a boil and took it off once the pears were cooked and tender. Continue to cook until the liquid had reduced to a thick sauce. Pick out the vanilla bean before putting it in the strudel.
