If you are ever in Richmond, BC during the summer months I suggest popping into Richmond Country Farms for some fresh produce. They have been family owned and operated for over 35 years and they grow and sell fresh, local and organic produce for very good prices. Plus they have a pumpkin patch and Hallowe’en is just around the corner! My family has been going there for years, as long as I can remember. Our dentist is in Richmond and after every visit we would stop there and get our fruit and veggies for the week. I was just at the same dentist last week and decided to go to the farms. For old times sake.

I picked up a huge head of local cauliflower and since Fall is pretty much in full swing here in Surrey, soup was in order. The hubby and I absolutely love cauliflower. It’s a staple in our regular diet and we have it tons of different ways like roasted, grilled, mashed, pizza dough, raw…you name it! For the soup though I wanted to make it lighter and healthier than usual. No cream or milk of any kind went into this lighter version of a classic soup.

A Lighter Cauliflower Cheese Soup

serves 6

1 large head of cauliflower, roughly chopped
6 cups vegetable stock
2 cups shredded Monterey Jack cheese
2 carrots, chopped
2-3 stocks celery, chopped
1 large onion, chopped
2 tablespoons dijon mustard
1 tablespoon chili flakes (optional)
1 tablespoon olive oil
Salt and pepper

Sweat your mirepoix (onions, carrots and celery) in olive oil in a large pot on medium on your stove. Once translucent add the cauliflower and vegetable stock. Reduce the heat a bit so that it is at a light roll, not a hard boil. Once the cauliflower is tender puree the mixture with an immersion blender. Add mustard, chili flakes and cheese and puree again until smooth. Season with salt and pepper at every step of cooking.

The mustard might sound weird but my mom puts it into hers and I think it puts that extra tang and kick into the soup. This isn’t a typical thick cream of cauliflower. It is a lighter version in body and calories but isn’t light on flavor. According to My Fitness Pal recipe calculator it is just 160 calories per serving!

I submitted the recipe on My Fitness Pal so hopefully one day soon you’ll be able to search for it once they get that feature up and going. I’m assuming it will be under “Lighter Cauliflower Soup – mangokid” if you are using that app.
