So you may have noticed the lack of posts recently. Evan and I have made the decision to move out of our home town and into a nice family city in the burbs. Our tiny apartment is slowly being filled with boxes and bags are being filled for donations. One of my favourite parts about moving is purging all of your current things. Evan and I tend to be quite ruthless when we move and get rid of tons of things. I think it’s healthy and prevents us from being hoarders.

I took a small break today from packing to make a healthy lunch and a quick Skype date with my sister who is living in London. I’ve disliked Brussels sprouts my whole life. I have read on lots of foodie blogs about the same story, hated Brussels sprouts, tried them roasted and then they’re obsessed. So I thought one day a few weeks ago that I would try them roasted and what do ya know. Now I’m obsessed with Brussels sprouts. Forget the protein and starches, just give me a big ole bowl of Brussels sprouts. One of my other favourite veggies to roast is cauliflower so I made a roasted Brussel sprouts and cauliflower with bacon.

Halve and quarter the Brussels sprouts and cauliflower so they are about the same size. Thinly slice 1 strip of bacon mix with the veggies. Season well with salt and pepper and roast in the oven at 375F for about 30-40 minutes, tossing occasionally.  I didn’t add any oil or butter but used the fat from the bacon to coat the veggies as they cooked. When the veggies are golden brown and carmalized and the bacon is crispy it’s done!
